Blanc de Noir – White from Red 2020

Region: Upper Galilee mountains.

Varieties: 100% Grenache.

Style: A refreshing wine with a pale greenish color. With a velvety texture, the wine displays characters of rose and peach blossom, sour cherry, and a hint of fresh grass. Characteristics of the red Grenache variety are preserved in this invigorating spring-like wine.

Technical Data: Hand-harvested in a selective manner, the grapes were gently squeezed from full clusters. The grapes underwent about three weeks of fermentation at temperatures ranging between 12-18oC (54-64oF). Immediately after fermentation, the wine was separated from its heavy sediments and stored for several months in stainless steel vats on light yeast sediments.
